Chicken Parm Sandwich

1 package of Cole’s Texas Toast
4 boneless, skinless chicken breasts
2 cups Italian breadcrumbs
1 jar of your preferred marinara sauce
1 cup of basil leaves
8 oz fresh mozzarella
Preheat oven to 425 degrees. Whisk eggs together in a small bowl. Pour breadcrumbs into shallow dish. First dip chicken breast in egg mixture, and then into the bread crumbs. Add a slice of mozerella and bake chicken breasts for 18 minutes.
While the chicken bakes, prepare Cole’s Texas Toast according to package instructions and heat marinara sauce in a small saucepan.
Once the chicken is cooked, let rest for 5–10 minutes. Slather half of the Cole’s Texas Toast pieces with marinara, add chicken breast, and top with fresh basil. Enjoy!
